Pad Thai is one of Thailand's national dishes and arguably the most popular Thai food internationally. This stir-fried rice noodle dish features a perfect balance of sweet, sour, and savory flavors with a hint of spice. Topped with peanuts, bean sprouts, and lime, it's a complete meal in itself.
History
Pad Thai was invented in the 1930s-1940s as part of Thailand's nation-building campaign. The dish was promoted as a national dish to help create a sense of Thai identity and reduce rice consumption during a shortage.

- 1Soak rice noodles in room temperature water for 30 minutes. Prepare the sauce by mixing tamarind paste, fish sauce, palm sugar, and a splash of water.
- 2Heat a wok over high heat. Add oil and stir-fry garlic until fragrant. Add shrimp and cook until pink.
- 3Push ingredients to the side. Add beaten egg and scramble. Mix with the shrimp.
- 4Add drained noodles and sauce. Toss quickly over high heat for 2-3 minutes. Add bean sprouts and chives, toss for another minute.
- 5Serve immediately topped with crushed peanuts, extra bean sprouts, lime wedges, and dried chili flakes on the side.
Tips
Soak rice noodles in room temperature water for 30 minutes before cooking. Have all ingredients prepped and ready before you start cooking - the actual stir-frying is very quick. Don't overcook the noodles; they should be slightly chewy. The key to great Pad Thai is high heat and quick cooking.
