Ingredients
- 3 slices Galangal
- 2 stalks Lemongrass (Bruised and cut into 2-inch pieces)
- 4 leaves Kaffir Lime Leaves (Torn)
- 3-5 pieces Thai Chili Peppers (Adjust to taste)
- 3 tbsp Fish Sauce
Instructions
- 1Bring 4 cups of water or stock to a boil in a large pot. Add the galangal, lemongrass, and kaffir lime leaves. Simmer for 5 minutes to infuse the flavors.
- 2Add the mushrooms and tomatoes. Cook for 2-3 minutes until the mushrooms are tender.
- 3Add the prawns and cook for 2-3 minutes until they turn pink and are cooked through. Be careful not to overcook.
- 4Turn off the heat. Add fish sauce, lime juice, and chili paste. Taste and adjust seasoning - it should be hot, sour, and savory.
- 5Garnish with fresh cilantro and serve immediately with steamed rice.
